Eating a rainbow

Most people have heard that it is important to "eat a rainbow" every day.  And I don't mean Skittles.  Eating a variety of fruits and vegetables of different colors is an easy and fun way to make sure that you are getting a variety of nutrients in your diet.  It is also an easy, concrete way to teach your children how to make healthy choice about food.  Sometimes I will ask Henry what colors he has eaten for the day and help him choose a snack in a color to help him complete his rainbow.  It's easy when the fridge is full of such a variety.  Here's the line-up for this week:  Basil, beets (no greens this time), broccoli, carrots, cilantro, cucumber, green beans, leeks, kale, onions, peppers, (variety), potatoes (red), scallions, summer squash, a lone tomato, zucchini.  I'd say we've got ROY G. BIV pretty much covered.
Let's not forget about a rainbow for the eyes.  Neal brought this beautiful bouquet of "butterfly weed" home from the St. Paul Farmer's Market for me.
I love color!
