Swiss Chard, Spinach, and Farro salad


I whipped up this quick salad to have on hand for lunches this weekend and week.  It was really easy and Nora and I both think it is pretty tasty.

Mix together the following ingredients:
3 cups of cooked semi-pearled farro (a grain similar to barley)
1 cup cooked, chopped swiss chard (leaves and stems)
1 cup fresh, chopped spinach
1 chopped scallion
the juice of one lemon
1/4 cup pesto
salt and pepper to taste
top with crumbled feta cheese
