Johanna has mentioned the she love sauteing the "humble zucchini." Last night I did just that- in a little olive oil with some scallions. We served it over frozen tortelinni and topped it with canned spaghetti sauce. (I heart prego.)
This sounds delicious. I'll remember it when my zuchinni is ready to harvest!
