the "quiche is not my favorite" quiche



I made this quiche yesterday morning- I thought that was genius 'cause baking at 4:00pm is a bit crazy around here.

One pillsbury pie crust
6 pieces of bacon
1 big bunch of swiss chard
2 green onions
1/3 c. parm cheese
2 T. fresh dill
6 eggs
1 1/2 c. milk
salt and pepper to taste
olive oil for sauteing

Cooked bacon in the microwave for 6 minutes
Sauteed the swiss chard and green onions in olive oil.
Mixed up eggs, milk, salt, pepper and dill.

Layered the crust with bacon, greens, parmesan cheese, egg mix. Cooked at 400 for 20 minutes and then at 325 for about 25 minutes.

I knew it would be a stretch for my fam. I'm usually the only one who eats swiss chard, but I thought bacon and cheese and yummy crust would help. My three year old daughter ate three bites for dessert, but said, "This quiche is not my favorite." The youngest threw it over the table. The oldest asked to be excused. And the hubby had one small piece without complaining, but I caught a not so happy facial expression. I guess I'll be eating the rest of it for breakfast. Could be worse!

I think Kerry made a quiche recently, too. We'll see if hers got better reviews.

  2. Love the family reactions--though you probably didn't. That happens to me all the time--I end up eating the leftovers for days, but I keep trying new things . . . maybe someday I'll hit on something that everyone likes!

  3. That is SO true Wendy! We had a major food breakthrough this weekend! Henry finally decided that he likes both pickles and salsa! Very exciting!
