pasta with golden corn sauce


I bought Serving Up the Harvest at this great, little local chicken/garden/organic goodness store this spring. So far the recipes have been winners.

Pasta with Golden Corn Sauce

Kernels from 6 ears of corn
1 1/2 c. chicken broth
pinch of saffron threads (I bought saffron for the first time today- whoa expensive!)
1/4 pound of smoked turkey or ham, cut into thin strips (I used some deli ham that needed to be used up.)
1 c. quartered cherry tomatoes
1/4 c. chopped fresh basil
salt and pepper
1 lb. linguine

1. Bring pot of salted water to boil.

2. Combine corn, chicken broth and saffron in a med. saucepan. Bring to a boil and simmer for about 1 minute.

3. Blend the corn mixture and then add turkey, tomatoes and basil. Season with salt and pepper.

4. Cook pasta and drain.

5. Combine the pasta with the sauce in a serving bowl, toss well, and serve immediately.
