Garlic Scapes

Before I joined a CSA I had never heard of or seen a garlic scape.  Now they are something that I look forward to every year.  You don't have to be a member of a CSA or a garlic grower to enjoy them anymore either.  I've seen them at Farmer's Markets and even at our local co-op.  As a matter of fact, I bought a handful last week for 1 penny.  That's right!  I grabbed a small handful of scapes that were marked at 5 cents a pound.  I apparently had about 1/5 of a pound, because they rang up at just 1 cent!  Fabulous flavor for a penny?  It can't be beat.

I mostly use my garlic scapes in egg and pasta dishes.  Just chop them finely and give them a quick saute in olive oil before using them. 

This morning I used them in an egg scramble.  
Quick green scramble
1 tbsp olive oil
2 garlic scapes chopped finely
2 tbsp chopped dill
1/2 cup shredded cheese (we used mozzarella)
4 eggs lightly beaten with 1 tbsp water
sea salt and black pepper to taste

Saute the garlic scapes in olive oil in a pan over medium heat for about 2-3 minutes.  Add you eggs and turn the heat to low.  Cook the eggs until almost set.  Add your shredded cheese and dill.  Mix thoroughly.  Add salt and pepper.  Cook until set.

We like our eggs with freshly baked bread spread with honey and butter.
Hot coffee or tea is a must!


Be sure to try the garlic scapes in an easy pasta dish.  Maybe tossed with some fresh asparagus and lemon or spinach and red pepper flakes.  Yum!

  1. This is so funny because I just had a chat with a girlfriend on Saturday at OUR farmer's market about garlic scapes. They were in her fresh omelet that she was enjoying from one of the booths and neither of us knew what they were! I will have to pass this valuable info. along--thanks!!!! ...and enjoy that breakfast. Yummm!
