Au Gratin Cabbage (aka cabbage your kids will eat)

Au Gratin Cabbage (adapted from Simply in Season)
4 cups shredded cabbage
1-2 cups shredded carrots
1/2 to 1 cup chopped green onion
Saute until crisp-tender in a deep skillet coated with cooking spray or a small amount of olive oil.
Transfer to a greased baking dish.

3/4 cup milk
2 eggs
1/2 cup shredded cheese
2 tbsp chopped chives
salt and pepper to taste
Combine in a small bowl and pour over vegetables.

Garnish the top with the following
1/4 cup shredded parmesan cheese
2 tbsp chopped parsley

Bake at 350 degrees for about 30-35 minutes.  I like to turn the broiler on for the last couple of minutes to brown the top.  The kids love this one and it is great as leftovers too.
